Baked Avocado Fries

Prep Time: 20 min | Cook Time: 10-14 | Yields: 24-32 fries

Ingredients:

2 ripe but firm avocados, pits removed (Cold)
⅓ cup of flour
2 medium eggs
1 cup of Croumbles (Crushed)
½ cup of plain Panko

Directions:

Place avocados in refrigerator for at least 2 hours
(Night before is best. this cools the avocado for easier cutting, peeling & handling)

Preheat the oven to 425°, and line a baking sheet with foil.  Place a metal grill on the
baking sheet.  (If you don’t have metal grill a baking sheet will work fine.)

Place the Croumbles into a large zip lock plastic baggie and using a roller pin, kitchen utensil,
or wine bottle to crush the Croumbles into smaller pieces.  Add Panko in baggie containing the Croumbles and mix thoroughly.

(You will need 3 small shallow bowls or plates.) 
Pour flour into first bowl.  
Add beaten-egg in second bowl  
Add Croumbles/Panko combination mixture in third bowl

Dip all avocado slices in flour, then eggs, then Croumbles/Panki and lay them onto the metal grill or directly onto the baking sheet.  
Bake the avocado fries for 10 minutes and check them.  
If the Croumble coating is starting to brown on the edges then they are ready.  
If not, place back in the oven for 2 to 4 minutes longer

(If the avocado fries are on the baking sheet and not the metal grill, then gently flip the avocado fries and return the baking sheet to the oven.)


Avocado w/Baked Egg

Prep Time: 10 min | Cook Time: 10-13 | Serves: 2 – 4

Ingredients:

2 Medium ripe avocado
4 Medium eggs
½ Tsp olive oil
¼ cup of shredded cheddar cheese
1 Tbsp of chopped Green onions
⅛ Tsp of salt
⅛ Tsp of ground black pepper
2 Tbsps of Croumbles (Garlic or Caesar)

Directions:

Cut the avocados in half lengthwise, remove the pits. 

Rub olive oil over the top of of the avocado.

Crack open the raw egg and place it in the pit cavity of the avocado.

Add salt and pepper over the top of the avocado and egg, place in the oven for 7 minutes.

Pull avocados out of oven and sprinkle on the cheese evenly over the 4 halves and return to
the oven for 3 to 5 minutes until the egg is cooked to your taste (over easy, medium or hard)

Remove the avocadoes from the oven and sprinkle on the chopped green onions and your 
favorite Croumbles.


 Avocado w/Albacore Tuna

Prep Time: 15 min | Cook Time: none | Serves: 2

Ingredients:

2 Medium ripe avocado

1 Small can of Albacore or Chunk Light tuna

⅓ Cup of mayonnaise (can substitute with plain Greek yogurt)

½ Teaspoon of lemon juice

¼ Cup of finely chopped red onion

1 Tbsp of chopped Green onions

¼ Tsp of garlic powder

⅛ Tsp of salt

⅛ Tsp of ground black pepper

2 Tbsps of Croumbles

Directions:

Cut the avocados in half lengthwise, remove the pits and set aside.  
Set aside the chopped green onions.

In a large bowl, combine mayonnaise, lemon juice, chopped red onions, garlic powder, salt, 
black pepper and mix well.  

Spoon the tuna into the avocados and sprinkle on the chopped green onions. 

Pick your favorite Croumbles and sprinkle over the top of the avocados.


 Stuffed Avocado and Tabbouleh

Prep Time: 5 min | Cook Time: none | Serves: 2

Ingredients:

2 Medium ripe avocados

1 cup of Tabbouleh salad ***

2 Tbsps of Croumbles

*** Tabbouleh Salad can be a bit involved and time consuming to make.
Find a local grocery  or specialty store that carries Tabbouleh salad in their
deli or salad bar or find a recipe online***

 

Directions:

Cut the avocados in half lengthwise, remove the pips and set onto your serving plates.

Spoon in the Tabbouleh Salad.

Pick your favorite Croumbles and sprinkle over the top of the avocados.
